I’ve been sick recently, you know, when all you want is some chicken noodle soup? Except I can’t just pick up a can from the store, because I can’t have gluten. :/

So today I decided to just take a shot at making my own.

I cut up potatoes (we had a ton to use up), onions, and carrots, then took a Costco rotisserie and pulled/cut it up and tossed it all into the crockpot. Then I added rice noodles (we happened to have shells on hand), and Costco chicken stock.

  
   
  
I planned to leave it on low overnight, but I really wanted to eat some tonight, so I put some in a pot on the stove. 😉

  
I only added salt, freeze dried basil, and chives for seasoning, and it tastes pretty good! My sick self definitely needed this.
