I love those sweet peppers at Costco, and I like jalapeño poppers, but I didn’t have jalapeños, so I decided to try the sweet pepper version lol. It turned out really well, so I’m adding it to my recipe bank! Here’s what I did:


Mini sweet peppers

Cream cheese (I ised about half a giant Costco block for maybe 20-30 peppers)

Green onions

Garlic cloves or minced garlic

Uncooked bacon
Preheat your oven to 375, and you’re ready to get going!

Start by chopping your green onions and mincing the garlic:

Add the cream cheese and mix well:

Here is where I’m changing it up next time…I used a ziplock and cut a bit off the corner. But I have the cool stand up ziplocks, so the multiple layers at the end made a weird and huge multi-hole. 😖 so I taped that one up and tried on the other corner, which kinda worked, but I went out and bought a cheap icing bag with attachments, and definitely am using that next time lol.

Now get your peppers ready by rinsing, and slicing off the tops length-wise. I started by either slicing the top if it was easy, or kind of fashioning a hole, but not cutting them in half. This makes more of a bowl, so the cream cheese is less likely to fall out. I saved the cut outs to snack on! ☺️

Now use a grapefruit spoon to scoop out the insides!

They’re ready to fill!

Take the bag and squeeze the filling into the “boats”

Then take the uncooked bacon and wrap each one (I used half slices on the really small ones):

Bake at 375 for about 25-30 minutes, or until that bacon is sizzling and as crisp as you like it!
